Quick and Easy Teabread

Its been yet another wet day today so in between Doctors appointments and going swimming we made a Teabread.
 
The recipe said Quick and Easy and it was.


This is how we made it:

Quick and Easy Teabread
 
350g mixed dried fruit (the pack I had included currants, sultana's, cherries, dried mango and apricots)
75g demerara sugar
1 large egg - beaten
175g self raising flour

  • Put the fruit in a large bowl, pour on 150ml of boiling water (I used tea without milk!) and leave for 30 minutes.
  • After 30 minutes drain off the water and mix the fruit with sugar and the beaten egg.
  • Sift the flour into the bowl and stir until everything is combined.
  • Spoon the mix into a 2lb lined loaf tin and sprinkle with a little sugar.
  • Bake for about 50minutes depending on your oven at 180c/350F/Gas mark 4 or Until risen and firm to the touch.
  • Leave the loaf in the tin for 10minutes before turning out onto a wire rack to cool.
Delicious warm from the oven smothered in butter!  Just what was needed after our swim this afternoon.
